Well, alright. We know, it’s banal: to make delicious cookies you need very good ingredients. Fortunately, Italy is full of them. Cookies are simple things: flour, butter, and eggs. If you have the right ingredients, then you are on the right track.

The flour

We wanted to have a different fragrance and bite. This is why we use five different lines of strictly Italian flours. We tried many and in the end we chose the Molino della Giovanna brand.

The eggs

Then, well, the eggs! They must be excellent for a self-respecting Bisco. Ours come from hens in Lecce who live quietly under the sun of Salento, pampered by the scent of the sea. This is why they make such special eggs.

The sugar

Strictly 100% Italian from beetroot. Beetroot is a crop that does wonders for the soil: it nourishes it and improves the productivity of subsequent crops. A great plant, especially when mixed with the other ingredients of the Bischi.

Butter, butter, butter!

We use quality butter designed for the most demanding palates. It is produced by an Italian company with passion and respect for the product and over 100 years of experience making butter. Lucky them. And we are lucky too.

The nuts

This is no joke! We only use hazelnuts from Giffoni I.G.P. and almonds from Bari I.G.P

Biscoteca Felline Lecce

to London

Have you ever been to Felline? No? Well, you have to visit! It is a small medieval town in Salento.

One of those places you go because of a friends recommendation. It is hot in summer, but there is a cool breeze that comes from the sea and in winter the weather is nice, even in the evening. People are friendly and you can chat with anyone.

This is why Francesco goes to town often. Then, one day, he went into a pastry shop and met Flavio. And from there, everything changed. Their friendship grew as they spoke with one another. “I like making cookies”, says Flavio. “Cookies?!?” He passes him one. Francesco puts it in his mouth and almost dies. Never has he tasted anything better. And with that, the creative laboratory for the pastry and biscuit shop was born.

Although, to tell the truth, the idea for a name did not come immediately, because a very special one was needed. One day, Francesco was in London. He walked aimlessly between markets, pubs and record shops in the more underground part of the city. And suddenly, bang! The Biscoteca!

The rest came naturally. Why, making delicious cookies is simple. Tradition and simple ingredients are enough. Simple, but of quality.

And there is as much tradition in Salento as you want. Just talk with the old lady at the end of the street or with the farmer outside of the village. Everyone has something to teach you. That’s enough, just look around and take it all in.

Sure, the Bischi are good, but we don’t just make those. We make sweets; pasticciotti and pastries of all kinds. Do you need a personalized cake for a special event?
